Cranberry Walnut Muffins


Whipped up this batch of cranberry walnut muffins for a friend who did me a huge favour by helping me to get stuff form her biz trip to the US. Made them with wholemeal flour for that healthy goodness :)

Blueberry Almond muffins!


Blueberries were on sale this week and I had to grab two punnets just for the heck of it. I mean....they were on sale! So I made blueberry muffins, adb since I had wholemeal flour on hand, I decided to make these a healthy batch and these are going to be my son's recess snack for the entire week.... hahaha!

Puffins!

Or in simple terms, Mini Chocolate Chip Pancake Muffins. Yes, a pancake in a muffin. No flipping needed. You get to eat yor pancakes at the same time as everyone else (I'm usually flipping so I get to eat last or not at all :p) Mini bites make them easy to eat and everyone's happy, especially the kids!

White Chocolate Walnut Muffins

Somehow I was still in a muffin mood since last week's Blueberry Muffin episode. Somehow that didn't hit the sweet spot with me. So I decided to try this one instead. Anything with white chocolate couldn't go wrong right? :p and I had some white chocolate lying around the kitchen, perfect!

The muffin was pretty good, but somehow it didn't have a very strong white chocolate taste. I think maybe it's because the leftover white chocolate I had lying around wasn't meant for baking....BIG MISTAKE...I wouldn't have eaten those chocolates on their own (hence they were still lying around the kitchen..haha). But good thing the walnuts made up for the shortcomings.
 
Well, back to the drawing board....lesson learnt, the best ingredients produce the best baked goodies!

Blueberry Muffins

It isn't too often that blueberries go on sale at the local supermarket. So when they were going for $4+ for 2 punnets of berries, I had to get some. What I was to do with them, I wasn't sure. Initial thought was to eat them as blueberrries are considered one of the superfoods, chock full of antioxidents. As I was contemplating if I would actually eat these little berries on their own, I decided hey, why not bake something out of them? First thing that came to mind were blueberry muffins. I guess it's a pretty common muffin you see being sold everywhere but you normally wouldn't bake these unless you have blueberries...and I do!

These turned out light, great for those who prefer their desserts to be a little less of the sweet variety. The bursts of blueberries throughout the muffins were such an inviting sight!
